Sodium benzoate (E211) is a white, crystalline powder or granulate with a slightly sweet taste and no odour, well soluble in water. It is one of the most commonly used food preservatives, effectively inhibiting the growth of bacteria, yeasts and moulds, with no effect on the human intestinal microflora.
Used in beverages, fruit preserves, sauces, margarines and dairy products in order to extend their shelf life.
